MUFFIN DI ARANCE E GOCCE DI CIOCCOLATO

 

INGREDIENTS:
250 G CAKE FLOUR
100 G SUGAR
100 G BUTTER, MELTED
3 WHOLE EGGS
1 1/2 ORANGE JUICE
ZEST OF 1 ORANGE
30 G CHOCOLATE CHIPS
1 SACHET YEAST
1 TSP. VANILLA EXTRACT
A PINCH OF SALT
*OPTIONAL - CANDIED ORANGE

PROCEDURE:
IN A BOWL, BEAT THE EGG AND SUGAR UNTIL FOAMY. 
MELT THE BUTTER, SET ASIDE.
GRATE THE ORANGE, MIX INTO THE BOWL WITH FLOUR AN.D SALT.
SQUEEZE THE ORANGES AND ADD IT TO THE MELTED BUTTER.
MIX THE BUTTER AND ORANGE JUICE MIXTURE INTO THE BOWL EGG AND 
SUGAR MIXTURE. THEN ADD THE FLOUR IN 2 BATCHES MIXING UNTIL YOU HAVE A 
SMOOTH TEXTURE.
ADD THE 20 G OF CHOCOLATE CHIPS, SET 10 G ASIDE FOR TOPPINGS.
FILL THE MUFFIN PANS. I USED 12 MUFFIN PAN.
BAKE IN A PRE-HEATED OVEN 180˚C FOR 25 MIN. 


NOTE:
I decided to top the muffins with my homemade Candied oranges which I soaked in brandy for 24 hours.
