SPAGHETTI CON ASTICE (SPAG. IN LOBSTER SAUCE) by: CucinaMuzzi

INGREDIENTS: 4 PORTIONS
400g       SPAGHETTI
1 pc.        LOBSTER 
1 pc.        CARROT
1 pc.        ONION
1 stalk     CELERY
1/2 glass  TOMATO SAUCE
1/2 glass  WHITE WINE
1 clove     GARLIC
PARSLEY
SALT, PEPPER
EXTRA VIRGIN OLIVE OIL as needed

PROCEDURE:
BOIL 2 PANS, 1 FOR THE PASTA AND THE OTHER FOR THE LOBSTER.
PLACE THE LOBSTER IN A SALTED BOILING WATER FOR 12 MIN. OR LESS FOR A SMALLER  ONE.
IN A PAN, SAUTE' THE CHOPPED VEGETABLES FOR ABOUT 5 MIN. THEN ADD THE GARLIC.
WHEN THE LOBSTER IS COOKED, CUT IT IN THE MIDDLE WITH A SHARP KNIFE. 
ADD THE MEAT IN THE SAUTEED VEGETABLES, TAKE OUT THE GARLIC. ADD THE WHITE WINE AND LET IT EVAPORATE. THEN LASTLY ADD THE TOMATO SAUCE.
BOIL THE PASTA AND ONCE COOKED, ADD IT TO THE SAUCE, ADD ALSO THE PARSLEY 
AND OLIVE OIL.

Note:
For a nice presentation, you can use 2 lobsters, one small for decoration when serving it on a big plate. You can also add cherry tomatoes to have some nice color to the plating.
