SPEZZATINO DI POLLO IN FRICASSEA
Ingredients:
1 kg Chicken in Pieces
200g Button Mushrooms
1 Yellow Bell Pepper, cut in squares
100 ml White Wine
1 Onion, thinly sliced
2 Egg Yolks
Juice of half a lemon
3 tbsp Extra-Virgin Olive Oil
Parsley as needed
Salt & Pepper
Procedure:
Wash, clean and dry the chicken then remove the skin.
In a pan, heat up the EVOO, then add the thinly sliced onions. Add the chicken pieces, let it cook for some minutes or until its seared well.
Add the mushrooms and the pieces of bell peppers to the chicken, season with salt & pepper then the white wine, let it evaporate, then add a scoop of broth. Simmer for another 30 minutes, then 10 5 minutes before turning off the flame, add the mixture of 1 scoop of broth, egg yolks, parsley & the juice of half a lemon into the pan. Mix until you get the creamy texture, then garnish with Parsley!
