STRUDEL DI MELE
INGREDIENTS:
Dough: 1 egg, 250g flour 00, 100g butter, 1 tbsp. cold water & a pinch of salt.
Filling: 1kg Apple (mix of golden & red), 200g melted butter, 70g Raisins(soak in water), 1 lemon (zest & juice), 40g pine nuts(toasted), 100g sugar, 60g breadcrumbs (toasted), vanilla powder, cinnamon (as needed), 2 tbsp. Brandy (optional)
PROCEDURE:
Dough:
In a mixing bowl, add the flour, egg, butter in cubes at room temp. & salt. Mix, Knead, then slowly add the cold water, mix until it will be all incorporated and formed into a ball. Place in the cling wrap, and in the chill in the ref for at least 2 hours.
Roll the dough as thinly as possible, I always roll it in a printed kitchen towel, and when i see the through the prints of my kitchen towel, that's when i get it right. Peel the apples, slice thinly, then add the cinnamon, brandy & lemon juice, then set aside. Now you can add the filling, Brush the dough with melted butter, then spread the breadcrumbs, leaving an inch on the border, then add the apple slices, spreading it completely, then spread the drained raisins, toasted pine nuts, sugar, vanilla powder and the lemon zest. And now you are ready to roll, close the both edges, and place in the baking tray with the parchment paper, then brush with butter. In a preheated oven of 160°C, bake for 60 minutes. brushing it with butter every 15 min.

Note:
For easy kneading and rolling the dough, I used wax paper, so I don't need to transfer it from kitchen towel to wax paper.
And to add crisp to my dough, I sprinkle some brown sugar after brushing it with butter before placing it in the oven.
