100g TAGLIATELLE PASTA
1 clove GARLIC
5 pcs. CHERRY TOMATOES
1 tbsp. EXTRA VIRGIN OLIVE OIL
100g MIXTURE OF SEAFOOD: CLAMS, SHRIMP & SQUID
1/2 glass DRY WHITE WINE
PARSLEY AS NEEDED
GROUND BLACK PEPPER OR CHILI
SALT
PROCEDURE:
- BRING THE SALTED WATER TO BOIL FOR THE PASTA.
- IN A PAN, HEAT UP THE OIL, BROWN THE GARLIC, THEN ADD THE SHRIMP, CLAMS, SQUID AND THEN THE WHITE WINE, LEAVING IT TO EVAPORATE BEFORE ADDING FRESH CHERRY TOMATOES, AND PARSLEY. SALT AND BLACK PEPPER TO TASTE.
- PLACE THE PASTA IN THE SALTED BOILING WATER AND COOK FOR 5 MIN. OR AS INDICATED IN THE PACKAGE.
- WHEN PASTA IS COOKED, TOSS THE PASTA IN THE PAN WITH SEAFOOD SAUCE. SERVE WITH ANOTHER SPRINKLE OF PARSLEY AND GROUND BLACK PEPPER
Note:
The recipe varies from time to time considering the availability of the ingredients. In the Philippines, I am using "Ponao" instead of the clams found in Italy, you can also use the mussels too and I usually peel my shrimp before adding it. Some like to use slices of squid instead of rings. In my kitchen, I usually omit tomato sauce where some recipes call for it, If you do like red sauce, you will add it after the wine has evaporated, allowing to simmer for some minutes before adding in the pasta. It's a very simple dish yet very easy to make. Enjoy!
