BRODETTO DI PESCE
INGREDIENTS: (for 4 persons)
1 kg mix Seafood (assorted fish, crab, prawns, etc.)
1 glass of Extra Virgin Olive Oil
1/2 Onion Chopped
1 Clove of Garlic
1 Laurel Leaf
1 glass of Tomato Sauce
1/2 Glass of Red Wine Vinegar
Salt, Black Pepper, and Red Chili
1 Tbsp. of Flour, Sugar as needed
Procedure:
Brown the chopped onions and garlic in olive oil, add the tomato sauce, wine vinegar, laurel leaf, salt, pepper, and the red chili. Adjust the density of the sauce, adding the flour or the water. Let it boil for 10 minutes, then add the fish, hard-shelled fish first then let it simmer for 15 minutes, add the delicate and small fish then again simmer for 10 minutes.
Note:
Best served with Polenta.
