OSSOBUCO ALLA MILANESE / BEEF SHANKS MILANESE STYLE


Ingredients:
2 pcs.        Beef Shanks
2 Tbsp.      Flour
30 gr.        Butter
1/2 glass   White Parsley
500 ml.     Broth
Salt & Pepper

Gremolada Mixture:
2 Tbsp.     Chopped Onions
1 clove      Garlic
1 pc.         Lemon (only Zest)
1Tbsp.      Chopped Parsley + garnish
10 gr.       Butter
3 pcs.       Anchovies  
Salt & Pepper 

Procedure:
Sprinkle the meat with black pepper and salt on both sides then coat the beef shanks with flour, Set aside. 
In a pan, melt the butter and sear the beef shanks until brown. Add the wine, and leave it evaporate, then add a scoop of broth, then lower down the flame to a minimum and cook for 2-3 hours depending on the size of the meat, adding slowly the broth until the meat is tender.
Now, make the gremolada mixture, in a bowl, add the finely chopped onions, garlic, lemon zest, chopped parsley, anchovies, salt & black pepper.
Ten minutes before turning off the flame, add the gremolada mixture.
Best serve with Saffron risotto or Mashed Potatoes.

Note:
Here, I am serving the dish with risotto and it's the best pair ever. You can also use the veal Shanks for this recipe and the cooking hours will be less compared to the beef shanks.
